could this humidity sensor work with 1216h 1-wire interface ?

The 1-wire protocol  it uses does not seem to be the same as the one the WS uses. The protocols also seem incompatible so one of the 1-wire buses would have to be exclusively used for it.

WHich humidity sensors are compatible with webswitch and the DS1820 temperature sensors?  How is humidity displayed in WebSwitch?

That link given above is a bit pricey (50 €), don't you have any cheaper humidity sensor reference that has compatibility with the Webswitch?
