I have a k3s with p3 kpa500 kat500 all connected with original Elecraft cables and perfect functioning, I bought elecraft 3k-twin to remotely connect another k3s, the problem is that the supplied cable E1d
and the E2c cable on the k3s side have the 9pol connector on the k3s side.
I ask which cables should I build to connect the rrc to the two k3s, naturally leaving the p3, the kpa and the kat as well.

You need RJ45 to  9 pin D-Sub adapter cabels from Elecraft E980297. I thougt they where delivered with the K3S but maybe not anymore.

one more question, I usually build the cables myself,
I ask if it is correct in the Ed1 cable on the k3s side to replace the 9pf with a j45 respecting the same pinout as the 9pf.
the same thing for the Ec2 cable put a j45 plug on the k3s side in place of the 9pf plug with the same numerical pinout.
I hope I was clear in the explanation.

I doubt the K3s RJ45 is numbered the same as the dsub. You need to check the Elecraft docs I have not checked.
